Ingredients
1 1/2 cup unbleached flour, sifted
1/4 cup sugar
1/4 cup brown sugar, packed
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1 each large egg, slightly beaten
1/2 cup vegetable oil
1/2 cup milk
1/2 cup chopped pecans
Directions
Sift together flour, sugar, brown sugar, baking powder, salt and
cinnamon into mixing bowl. Combine egg, oil and mil in small bowl;
blend well. Add all at once to dry ingredients, stirring just enough
to moisten. Stir in pecans. Spoon batter into greased 2 1/2-inch
muffin-pan cups, filling each 2/3rds full. Bake in 400 degree F. oven
20 minutes or until golden brown. Serve hot with butter and homemade
jelly or jam. Serving Hint: Match the mood of your mealtime by using
a variety of pretty napkins to line a muffin basket. For a picnic,
choose a red and white checked napkin; for special dinners, use your
finest linen napkins; and for Christmas, of course, a bright red
napkin.

The History of Recipes
Written cooking instructions as a concept can be observed way back into antiquity, in truth as far back as the ancient Egyptians, and maybe further still. Having said that, in the main part, these ancient recipes were just simple hieroglyphic or cunieform instructions for food preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius compiled a few scripts which described recipes cooked by the Romans. In his scrolls, he tells us how the roman meals were separated into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the Romans made use of many different herbs, including a few you will know like bay, mint and asafoetida. Over the next few hundred years, the rich and powerful families of Wesstern Europe tried to offer the most exotic banquets, and as a consequence, the best cooks and their collection of recipes were greatly in demand. Nevertheless, it wasn`t until the 19th century that cooking and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down recipes to help cooks of their time. When we get to the 1900s, cookery books were starting to become popular mostly due to more people being able to read, more leisure time and having more money. |
