Ingredients
1 3/4 cup sugar
3/4 cup butter
3 cup flour, sifted
1 tbsp baking powder
1 tsp salt
1 1/8 cup milk
4 each egg whites
1 cup brown sugar
2 tbsp cinnamon
3/4 cup flour
3/4 cup butter
2 cup pecans
Directions
~------ TOPPING:
Cream sugar and butter until soft and smooth. Sift together
flour, baking powder, and salt. Add sifted ingredients
alternately with milk. Fold in egg whites beaten stiff. Pour
into large baking pan. Mix topping together until it forms
pea-sized crumbs. Blend in pecans. Spread over the top of batter
and bake at 350 degrees F for 40-50 minutes. Cut into squares.

The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions back into history, in fact as far back into history as early Egypt, and quite possibly further than that. In practice though, generally, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe in existence, according to food historians are some tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. As we move into Roman times around 25BC a roman called Apicius created a number of documents describing recipes enjoyed by his fellow Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. He also recounts how the Roman cooks used many herbs, including some familiar names for example basil, mint and asafoetida. Moving on, we find two interesting books from the fourteenth century : a book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Perhaps surprisingly, these are unconnected to the curry that appears on menues today, but rather accounts of the types of meals prepared by the cooks of the rich. Later, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from Arab countries, including spices like parsley, basil and rosemary. These new foods and spices prompted an eruption in manuscripts on food, some of which still exist in private libraries. During the following few centuries, the families of Europe competed with each other to serve the best banquets, and as a consequence, the best chefs and their collection of recipes could command a high salary. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, verifying, and writing down recipes common in their social group. By the advent of the 1900s, cookbooks were in high demand, due to more people being able to read, people having increased leisure time and having more money to spend. |
