Ingredients
6 each chicken breast halves-boned
1 salt and pepper
1 each butter or margarine
3 tbsp dijon mustard
8 oz pecans-chopped fine
4 tbsp butter or margarine
1 tbsp oil
2/3 cup sour cream
1 tbsp dijon
Directions
Toast whole pecans in pre-heated 350 deg oven.
Flatten chicken breasts, season with salt and pepper.
Melt butter and whisk in the 3T dijon. Dip each piece of chicken in
the butter mix. Coat with pecans.
Melt 3 T of the butter and the oil in skillet over medium heat.
Saute half of the chicken breasts until lightly brown. Repeat with
the rest. Transfer to a baking dish and bake 15-20 minutes. Melt
remaining butter in saucepan, add sour cream, remaining dijon, salt
and pepper. Whisk together and remove from heat. Check seasonings.
Place a spoonful on each piece of chicken and garnish with the whole
pecans.

Academics have tracked the existence of recipes far back into distant history, in truth as far back as the Egypt of the Pharoahs, and quite possibly further than that. This early Roman chef recounts how the cooks of Roman times made use of a good variety of spices and herbs, including a few you will know like bay, fennel and asafoetida. In the 15th century, people returning from the crusades brought back many new foods and spices from the holy land, including parsley and basil. These new spices and herbs led to an eruption in manuscripts on cooking, the majority of which still exist in private libraries. By the arrival of the twentieth century, cookbooks are starting to become popular as a result of better eduction, people having increased free time and disposable income. |
