Ingredients
6 chicken breast halves-boned
1 salt and pepper
1 butter or margarine
3 tbsp dijon mustard
8 oz pecans-chopped fine
4 tbsp butter or margarine
1 tbsp oil
2/3 cup sour cream
1 tbsp dijon
Directions
Toast whole pecans in pre-heated 350 deg oven.
Flatten chicken breasts, season with salt and pepper.
Melt butter and whisk in the 3T dijon. Dip each piece of chicken in
the butter mix. Coat with pecans.
Melt 3 T of the butter and the oil in skillet over medium heat.
Saute half of the chicken breasts until lightly brown. Repeat with
the rest. Transfer to a baking dish and bake 15-20 minutes. Melt
remaining butter in saucepan, add sour cream, remaining dijon, salt
and pepper. Whisk together and remove from heat. Check seasonings.
Place a spoonful on each piece of chicken and garnish with the whole
pecans.

It is quite feasible to trace the history of transcribed cooking instructions back into the distant past, at least as far back into history as early Egypt, and potentially, even further back. Interestingly, the oldest recipe discovered, according to experts are some tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. As we move into The time of the romans 25BC a man called Apicius assembled some documents describing recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and dessert, something that is very familiar to us today. This early Roman chef informs us how the cooks of his times used many different aromatic flavors, including a few that are still present in modern kitchens such as basil, rue and asafoetida. Later, in the 15th century, the Crusaders brought back many foods and herbs from the holy lands, including spices like coriander, basil and rosemary. The introduction of these new culinary ideas prompted an eruption in recipe manuscripts, some of which are now in private cookery archives. During the next few hundred years, the powerful families of Europe competed with each other to offer the most extravagent meals, and consequentially the best chefs and their recipes became highly prized. However, it wasn`t until the 19th century that haute cuisine and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and recording the recipes of their peers. The introduction of the TV gave us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes such as those found on this web site. |
