The History of Recipes
It is actually possible to trace the history of recipes far back into distant history, in truth as far back into history as the early Egyptians, and maybe further still. Interesting though that maybe, in the main part, these early recipes were just very simple hieroglyphic instructions for meal preparation.
As we move into Roman times 25BC a roman called Apicius wrote a few documents which described recipes enjoyed by the Romans. In his publication, he tells us how the roman meals were split into appetizers, main course and afters, a style of dining still practiced today. Aspicius recounts how the ancient cooks were skilled in the use of a good variety of spices, including a few that will be familiar to modern cooks like bay, mint and parsley. During the next few centuries, the powerful and wealthy tried to serve up the most exotic banquets, and as a result the best cooks and their collection of recipes became highly prized. Even so, it was during the nineteenth century the formal cooking and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collecting, testing, and publishing recipes that were common in the better off homes of the day. By the advent of the 20th century, cook books were increasing in popularity due to increased literacy, people having more leisure time and disposable income. |
