Ingredients
CRUST
3 cup flour
1/4 cup plus 2 tablespoons sugar
3/4 tsp salt
3/4 cup margarine or butter softened
FILLING
4 eggs, slightly beaten
1 1/2 cup sugar
1 1/2 cup karo light or dark corn syrup
3 tbsp margarine or butter, melted
1 1/2 tsp vanilla
2 1/2 cup chopped pecans
Directions
For filling mix all ingredients except pecans until well blended.
Stir in pecans. Heat oven to 350 . Grease jelly roll pan, 15 1/2" x
10 1/2" x 1". Beat flour, sugar, margarine and salt in large bowl on
medium speed until crumbly (mixture will be dry). Press firmly in
pan. Bakeuntil light golden brown, about 20 minutes. Prepare filling.
Pour over baked layer; spread evenly. Bake until filling is set,
about 25 minutes. Cool. Cut into 1 1/2 inch squares (70 squares).

The History of Recipes
Food historians have traced the existence of recipes back into antiquity, in fact as far into history as the Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these old recipes were just very simple hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the oldest recipe discovered, according to experts in ancient history is a collection of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. Later, there are a couple of cookery books which appeared in the 14th Century - a book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Don`t be fooled by the titles though, these books have no connection with the curry that appears on menues today, but instead descriptions of the types of meals on the menus of the nobility of that time. During the following few hundred years, the powerful families of Europe competed to lay on the most extravagent meals, and consequentially cooks and their recipes increased in prestige. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, testing, and recording recipes that were common in the better off homes of the day. By the time we get to the 1900s, recipe publications were highly popular mostly as a result of better eduction, people having more spare time and a general increase in wealth. The arrival of television brought us TV cooks and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes just like those on this recipe site. |
