The History of Recipes
Written recipes as a concept can be traced back into the far past, at least as far back into history as the Egyptians, and maybe further still. Having said that, generally, these ancient recipes were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the oldest recipe found, according to academics are some ancient tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. Much later, in Roman times a man called Apicius created a few documents describing recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvres, entrees and afters, something that is very familiar to us today. Additionally, he informs us how the cooks of his times used a wide range of herbs, including a few that are still present in modern kitchens like bay, fennel and dill. Later on, in the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, including coriander, basil and rosemary. These new foods and spices created a surge in manuscripts on food, some of which are now in private libraries. The TV revolution brings us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everyone to access thousands of recipes just like those on the site you are now reading. |
