The History of Recipes
It is possible to track the history of meal recipes back into antiquity, at least as far back into recorded history as the early Egyptians, and potentially, even further back. However, mostly, these ancient cookbooks were just very basic hieroglyphic instructions for preparing meals.
In fact, the oldest recipe found, according to experts in ancient history are a few stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Later on, in The time of the romans around 25BC a man called Apicius compiled a collection of documents describing recipes prepared by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into starters, entrees and dessert, something we still use today. Additionally, he describes how the cooks of his times made use of a wide range of spices, including a few that are still present in modern kitchens like bay, rue and parsley. For the decades that followed, the powerful families of Europe competed with each other to serve up the best banquets, and as a result the best chefs and their recipe collections increased in prestige. Even so, it was during the 1800s that formal cookery and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. By the time we get to the 20th century, recipe publications were in great demand, due to increased literacy, people having increased leisure time and a general increase in wealth. The arrival of television brought us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through thousands of recipes just like those on this recipe site. |
