The History of Recipes
Historians have tracked the existence of recipes far back into distant history, certainly as far back into history as early Egypt, and potentially, even further back. Interesting though that is, mostly, these old cookbooks were just primitive hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. As we move into The time of the roman empire 25BC a roman called Apicius created some scripts detailing recipes enjoyed by the Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and afters, a very modern way of dining. Aspicius also tells us how the ancient Romans used a good variety of herbs, including a few you will know like bay, rue and parsley. Over the next few centuries, the powerful and rich competed to serve up the most exotic meals, and consequentially the best chefs and their recipe collections were greatly in demand. However, it wasn`t until the 19th century that cooking and cookery books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collecting, verifying, and publishing recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cookbooks are highly popular mostly as a result of better eduction, people having increased leisure time and being a little richer. |
