The History of Recipes
It is quite feasible to follow the history of recipes far back into history, certainly as far back into recorded history as early Egypt, and possibly even further. Having said that, mostly, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to experts in ancient history are a few stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. As we move into The time of the romans around 25BC a man called Apicius created some scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the meals were separated into starters, main course and afters, something that is very familiar to us today. Additionally, he informs us how the cooks of Roman times used many spices and herbs, including some familiar names such as bay, fennel and asafoetida. During the next few centuries, the upper-class families of Europe competed to serve the most extravagent meals, and consequentially cooks and their recipes increased in prestige. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, testing, and writing down popular recipes of the day. By the advent of the 20th century, cooking books are highly popular as a result of better eduction, more spare time and a general increase in wealth. The revolution that is television brings us TV cooks and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everybody to access thousands of recipes like the ones you can find on this site. |
