Ingredients
1 lb beef sirloin steak ( 1 inch
1 thick)
2 tbsp oil
1 tbsp fresh lemon juice
1 tbsp water
2 tsp dijon mustard
1 tsp honey
1/2 tsp dried oregano
1/4 tsp pepper
1 medium green, yellow, or red bell
1 pepper -- cut into 1 inch
8 large mushrooms
Directions
Cut steak into 1 inch pieces. Whisk together oil, lemon juice, water,
mustard, honey, oregano, and pepper in large bowl; add beef, bell
pepper, and mushrooms, stirring to coat. Alternately thread pieces of
beef, bell pepper, and nushrooms on each of 4 12-inch skewers. Place
kebabs on rack in broiler pan so surface of meat is 3 to 4 inches
from heat. Broil 9 to 12 minutes for rare to medium, turning
occasionally. Season with salt, if desired.
Kababs may also be grilled over medium coals for 8 to
11 minutes.
Yield: 4 servings.

The History of Recipes
We can trace the history of meal recipes back into the far past, in truth as far back into recorded history as the Egyptians, and possibly even further than that. In practice though, generally, these ancient cookbooks were just very basic hieroglyphic recipes for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to academics are a few ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. During the time of the Roman Empire a man called Apicius compiled a few documents describing recipes prepared by his fellow Romans. In his works, he describes how the meals of wealthy Romans were divided into starters, main course and desserts, something we still use today. Additionally, he recounts how the Roman chefs made use of many different aromatic flavors, including a few that are still present in modern kitchens for example bay, mint and parsley. In the fifteenth century, the Crusaders brought back many spices and herbs from Arab cuisine, such as coriander, basil and rosemary. These new foods and tastes was responsible for an increase in books on cookery, most of which still exist in private collections. Over the following few hundred years, the wealthy families of the West competed with each other to serve up the most exotic meals, and because of this cooks and their recipes were much in demand. However, it was during the nineteenth century that cookery and recipe books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, trying out, and recording recipes common in their social group. By the arrival of the 20th century, cooking books were in great demand, mostly due to higher levels of literacy, people having more free time and having more disposable income. Like it or not, the introduction of television brought us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, allowing us all to search through massive numbers of recipes like those on sites such as this. |
