Ingredients
1 karen mintzias
6 large sweet peppers
1 medium onion, coarsely chopped
1 salt & pepper to taste
3 tbsp vinegar (more if desired)
1/4 cup olive oil
1 oregano
Directions
Bake peppers in hot 450 F oven for about 20 minutes or until wilted
and soft. Remove seeds and outer skin. Cut in pieces and place in a
bowl. Add onion, salt and pepper. Mix vinegar and olive oil and add
to peppers. Sprinkle with oregano. Adjust seasonings if necessary.
Serve as appetizer.

The History of Recipes
We can follow the history of meal recipes far back into the far past, in fact as far into history as early Egypt, and possibly even further. Having said that, sadly, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered, according to food historians are a few stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius created a number of documents showing how to cook the recipes cooked by wealthy Romans. In his publication, he recounts how the roman meals were divided into hors d`oeuvre, main meal and dessert, something we still use today. He also recounts how the Romans used many different aromatic flavors, including a few that will be familiar to modern cooks like basil, rue and parsley. For the centuries that followed, the families of Europe strove to serve up the most extravagent meals, and consequentially cooks and their recipes could command a high salary. Even so, it wasn`t until the 19th century that haute cuisine and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, trying out, and publishing recipes to help cooks of their time. By the time we get to the 20th century, cookbooks were greatly in demand mostly as a result of better eduction, more free time and having more money to spend. The introduction of the TV gave us TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like those on sites such as this. |
