The History of Recipes
It is actually possible to trace the history of written recipes way back into ancient history, certainly as far back into recorded history as early Egypt, and potentially, even further back. Having said that, generally, these early cook books were just basic hieroglyphic or cunieform instructions for meal preparation.
As we move into Roman times 25BC a man called Apicius compiled some documents detailing recipes prepared by the Romans. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvre, main meal and afters, something we still use today. Aspicius informs us how the ancient chefs used many different spices and herbs, including some that we all recognise such as basil, rue and asafoetida. During the following few centuries, the wealthy families of Europe competed to lay on the most extravagent meals, and consequentially the best chefs and their collection of recipes were greatly in demand. Nevertheless, it wasn`t until the 19th century the formal cooking and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, testing, and writing down popular recipes of the day. By the advent of the 1900s, recipe books were highly popular mostly as a result of better eduction, people having increased spare time and being a little richer. |
