2 sweet red peppers, roasted
3 tbsp cream cheese
1/2 tsp cumin, or to taste
2 tbsp finely chopped sun-dried tom
1 clove garlic, minced
1/4 cup minced sweet onion (vidalia,
3 tbsp olive oil
2 tbsp chopped cilantro
1 salt & pepper to taste
Directions
*Note: Sun-dried tomatoes should be oil-packed type. Process all in
food processor until well blended. Serve chilled with crackers.

The History of Recipes
Written recipes as a concept can be tracked far back into ancient history, in truth as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, in the main part, these ancient records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe found, according to experts in ancient history is a series of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Much later, in Roman times a man called Apicius compiled a few documents describing recipes cooked by wealthy Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. He also tells us how the ancient cooks made use of a wide range of aromatic flavors, including some familiar names for example basil, rue and dill. Over the succeeding few hundred years, the wealthy families of the West competed with each other to serve the most extravagent meals, and as a result the best chefs and their recipe collections increased in prestige. Nevertheless, it wasn`t until the 1800s the formal cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, trying out, and writing down recipes common in their social group. The TV revolution brought us cooking programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes just like those on sites such as this. |
