The History of Recipes
Written recipes as a concept can be found back into the distant past, in truth as far back into history as pharonic Egypt, and possibly even further. However, in the main part, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to food historians are some tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. During the time of the Romans a man called Apicius assembled a number of scripts which described recipes enjoyed by the Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, main course and dessert, something that is very familiar to us today. Additionally, he recounts how the early Romans used a wide range of aromatic flavours, including some that we all recognise like bay, mint and dill. Later on, in the 15th century, the Crusaders brought back many new foods and spices from the East, such as coriander, parsley, and basil. These new herbs and spices prompted an increase in recipe publications, some of which are now in private cookery archives. When we get to the 20th century, recipe publications were increasing in popularity as a result of increased literacy, more free time and having more money to spend. The arrival of TV brought us celebrity chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to search through thousands of recipes just like those on our site. |
