The History of Recipes
Experts have traced the existence of recipes back into the far past, in truth as far back into recorded history as pharonic Egypt, and possibly even further. Having said that, in the main part, these early cookbooks were just basic hieroglyphic or cunieform recipes for preparing food.
During the time of the Roman Empire a man called Apicius created a number of documents which described recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into hors d`oeuvres, main course and desserts, a style of dining still practiced today. Aspicius also informs us how the ancient cooks made use of many different herbs, including a few that are still present in modern kitchens like thyme, rue and dill. Over the following few hundred years, the rich families of Wesstern Europe tried to serve the most extravagent banquests, and consequentially chefs and their collection of recipes could command a high salary. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and recording recipes to help cooks of their time. By the arrival of the 20th century, cooking publications were increasing in popularity as a result of better eduction, more spare time and having more money to spend. |
