The History of Recipes
Written cooking instructions as an idea can be observed far back into history, in fact as far as the ancient Egyptians, and quite possibly further than that. Having said that, sadly, these early records were just very simple hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the most ancient recipe in existence, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Progressing into Roman times 25BC a roman called Apicius wrote a number of documents showing how to cook the recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into starters, entrees and afters, a style of dining still practiced today. He also tells us how the ancient Romans used a good variety of herbs and spices, including some that we all recognise for example basil, mint and parsley. Later on, in the 15th century, people returning from the crusades brought back many new spices and herbs from Arab countries, including spices like coriander, parsley, basil and rosemary. These new foods and spices was responsible for an outbreak in manuscripts on cooking, many of which are kept safe in academic collections. Over the succeeding few hundred years, the powerful and rich houses strove to lay on the most exotic banquets, and as a consequence, the best chefs and their collection of recipes were highly sought after. Nevertheless, it was during the 1800s that cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collecting, verifying, and writing down the recipes of their peers. When we get to the twentieth century, cook books were starting to become popular mostly due to more people being able to read, people having increased free time and being a little richer. |
