The History of Recipes
Experts have traced the existance of recipes back into antiquity, in fact as far as the early Egyptians, and maybe further still. Interesting though that maybe, mostly, these early cookbooks were just simple hieroglyphic or cunieform instructions for preparing food.
During Roman times 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he tells us how the meals were split into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the ancient chefs made use of many aromatic flavors, including a few that will be familiar to modern cooks for example basil, rue and parsley. In the fifteenth century, the Crusaders brought back many new foods, spices and herbs from the holy land, including basil and rosemary. The introduction of these new herbs and spices created a torrent in books on cooking, the majority of which are now in private cookery archives. By the arrival of the 1900s, cooking books were starting to become popular due to better eduction, people having more spare time and having more money. |
