The History of Recipes
Experts have traced the existence of recipes far back into ancient history, certainly as far back into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that maybe, generally, these old recipes were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered, according to experts in ancient history are some ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. During the time of the Roman Empire a roman called Apicius created a collection of documents detailing recipes enjoyed by the Romans. In his publication, he describes how the meals were separated into hors d`oeuvres, entrees and afters, something that is very familiar to us today. He also recounts how the ancient cooks were skilled in the use of many different spices, including a few that will be familiar to modern cooks like basil, fennel and dill. As our culinary historical trip moves on a few more years there were a couple of recipe books published in the 1300s : a book titled `Forme of Cury`, and another named `Curye on Inglish`. Amusingly, these books are nothing to do with the spicy food that appears on menues today, but rather descriptions of the types of meals cooked for the rich and wealthy people of the time. In the fifteenth century, people returning from the crusades brought us a variety of foods and spices from the holy land, including spices such as parsley, basil and rosemary. These new spices and herbs caused a surge in cookery books, some of which still exist in academic collections. Over the following few hundred years, the rich and powerful families of the West competed to serve up the most extravagent banquests, and consequentially chefs and their collection of recipes increased in prestige. Even so, it wasn`t until the 1800s the formal cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collating, testing, and publishing recipes to allow everyone to enjoy them. By the arrival of the 20th century, cookery books are highly popular as a result of better eduction, leisure time and a general increase in wealth. |
