The History of Recipes

It is quite feasible to prove the history of written cooking instructions way back into the far past, certainly as far back as pharonic Egypt, and maybe further still. In practice though, in the main part, these ancient cook books were just very basic pictorial instructions for preparing meals.

Fascinatingly, the oldest recipe in existence, according to academics is a collection of tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`.

As we move into The time of the roman empire 25BC a roman called Apicius assembled a number of documents describing recipes prepared by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into hors d`oeuvre, main course and desserts, something we still use today. This early Roman chef tells us how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks like basil, mint and dill.

In the 15th century, knights returning from the crusades brought back many spices and herbs from Arab cooking, including spices like coriander, parsley, basil and rosemary. These new foods and spices caused an increase in recipe books, most of which are now in private collections.

By the arrival of the twentieth century, cookery publications were in great demand, mostly due to more people being able to read, people having increased leisure time and having more disposable income.

The introduction of television brings us TV cookery programs and the accompanying recipe books.

Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on sites such as this.
