Ingredients
2 cup uncooked long-grain rice
3 1/2 cup water
Directions
PUT THE RICE INTO A LARGE BOWL and wash it in several changes of water
until the water runs clear. Drain the rice and put in a heavy pot
with the water and bring to a boil. Continue boiling until most of
the surface liquid has evaporated. This should take about 15 to 20
minutes. The surface of the rice should have small indentations like
a pitted crater. At this point, cover the pot with a very
tight-fitting lid, turn the heat as low as possible and let the rice
cook undisturbed for 15 to 20 minutes. There is no need to fluff the
rice before serving it.

The History of Recipes
We are able to read the history of meal recipes way back into antiquity, at least as far back into history as ancient Egypt, and quite possibly further than that. In practice though, these, ancient cookbooks were just very simple hieroglyphic or cunieform recipes for preparing food.
As we move into The time of the romans around 25BC a roman called Apicius compiled a few scripts describing recipes prepared by wealthy roman citizens. In his works, he tells us how the roman meals were split into appetizers, main course and desserts, a very modern way of dining. Additionally, he recounts how the cooks of his times used many different aromatic flavors, including a few that are still present in modern kitchens like basil, fennel and dill. Later, in the fifteenth century, people returning from the crusades brought us many spices and herbs from Arab countries, including basil and rosemary. The introduction of these new tastes led to an increase in recipe books, the majority of which are now in academic collections. The revolution that is television brings us TV cookery programs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing everyone to access thousands of recipes like those on sites such as this. |
