The History of Recipes
Historians have tracked the existence of recipes back into distant history, certainly as far into history as pharonic Egypt, and maybe further still. Interesting though that maybe, sadly, these old cook books were just simple hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered, according to historians is a series of clay tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a few documents which described recipes enjoyed by the Romans. In his scrolls, he recounts how the meals were split into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the ancient chefs were skilled in the use of many different herbs, including many that are still in use today for example thyme, rue and parsley. For the centuries that followed, the upper-class families of Wesstern Europe tried to serve up the most exotic meals, and consequentially cooks and their recipe collections were greatly in demand. Nevertheless, it was during the nineteenth century that cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, verifying, and recording recipes common in their social group. The introduction of the TV brings us celebrity chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like those on this web site. |
