The History of Recipes
We can track the history of `recipes` far back into the far past, at least as far into history as the Egyptians, and potentially, even further back. Interesting though that is, these, early recipes were just very simple hieroglyphic recipes for food preparation.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history is a collection of tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. As we move into The time of the romans 25BC a roman called Apicius created a few scripts which described recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the Roman chefs were skilled in the use of many aromatic flavours, including a few you will know like basil, rue and dill. During the next few hundred years, the families of Europe tried to lay on the most exotic meals, and because of this chefs and their recipe collections increased in prestige. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe publications became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, trying out, and writing down recipes that were common in the better off homes of the day. By the time we get to the twentieth century, cookbooks were increasing in popularity mostly due to higher levels of literacy, increased leisure time and a general increase in wealth. |
