The History of Recipes
Written cooking instructions as a concept can be traced back into the far past, in fact as far into history as the Egyptians, and quite possibly further than that. However, generally, these old cook books were just very simple pictorial recipes for meal preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius wrote some scripts showing how to cook the recipes prepared by wealthy roman citizens. He describes how the meals of wealthy Romans were split into hors d`oeuvre, main course and desserts, a style of dining still practiced today. Additionally, he describes how the cooks of his times made use of a wide range of spices, including a few that will be familiar to modern cooks like thyme, mint and asafoetida. Over the next few hundred years, the powerful and wealthy houses strove to lay on the most exotic banquets, and as a result the best cooks and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe collections really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and publishing recipes to help cooks of their time. When we get to the 1900s, cook books are starting to become popular mostly due to increased literacy, more leisure time and having more money to spend. |
