Ingredients
1 cup parsley, chopped
1 cup basil, chopped
2 garlic cloves, minced
1 tbsp + 1 t olive oil
2 tbsp parmesan cheese
1/2 recipe basic pizza dough
1 1/2 cup ricotta cheese, part skim
4 1/2 oz mozzarella, part skim
2 tbsp skim milk
4 large plum tomatoes
1/4 cup beef broth
Directions
Preheat oven to 475 degrees. Mix parsley, basid, garlic, broth, oil
and 1 tb parmesan until combined. Spread pizza dough with pesto. In
medium bowl, combine ricotta cheese, mozzarella, milk and reminag 1
tb parmesan. Pread cheese mixture evenly over pesto; arrange tomato
slices over chees. Bake 20-25 minutes, until crust is golden.
Exchanges: 1/2 FA, 1 1/2 P, 1/2 V. 1 1/2 B, 10 cal. Per serving: 170
cal, 5 gm fat.

The History of Recipes
It is possible to track the history of `recipes` way back into history, certainly as far back as pharonic Egypt, and possibly even further. Interesting though that maybe, these, ancient cookbooks were just very simple hieroglyphic instructions for preparing food.
As we move into The time of the roman empire 25BC a roman called Apicius created a number of documents which described recipes cooked by the Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, entrees and desserts, a very modern way of dining. This early Roman chef describes how the Roman cooks used many spices, including a few that will be familiar to modern cooks such as thyme, mint and parsley. Over the following few hundred years, the families of Europe tried to offer the most exotic meals, and because of this chefs and their recipe collections were highly sought after. However, it wasn`t until the 1800s that fine cooking and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collating, testing, and publishing recipes for their fellow cooks to enjoy. By the arrival of the 20th century, cookbooks were starting to become popular mostly as a result of higher levels of literacy, increased leisure time and disposable income. |
