The History of Recipes
Academics have traced the existance of recipes far back into ancient history, in truth as far into history as ancient Egypt, and possibly even further than that. However, these, early records were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe found, according to food historians is a series of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. During Roman times around 25BC a roman called Apicius compiled some scripts which described recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals were separated into starters, main course and desserts, something that is very familiar to us today. He also tells us how the ancient cooks were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern cooks such as thyme, rue and parsley. In the fifteenth century, people returning from the crusades brought us many new spices and herbs from the East, such as parsley and basil. The introduction of these new foods and spices was responsible for a torrent in books on cookery, some of which are kept safe in private cookery archives. During the succeeding few hundred years, the rich and powerful families of the West tried to serve up the most exotic meals, and as a result cooks and their recipe collections could command a high salary. Nevertheless, it was during the nineteenth century that fine cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. By the advent of the 1900s, recipe publications are in high demand, mostly due to higher levels of literacy, increased leisure time and having more disposable income. Like it or not, the introduction of TV brought us cooking programs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, permitting everyone to search through thousands of recipes just like those on this recipe site. |
