1/2 tbsp dough enhancer
3 1/2 cup better for bread flour
2 tsp active dry yeast
SECOND VERSION
3 tbsp brown sugar
1 tsp sea salt
1 cup buttermilk
1/4 cup apple juice concentrate
1 1/2 tbsp butter, or margarine
1 cup fresh apple cut up
1 1/2 tsp cinnamon
1/2 tbsp dough enhancer
3 1/2 cup better for bread flour
2 tsp active dry yeast
Directions

Mix the flour dough enhancer and cinnamon before adding to bread pan.
You may want to do first knead and then reset and start again for
extra kneading.

The History of Recipes
It is quite feasible to follow the history of recipes way back into distant history, in fact as far back into recorded history as early Egypt, and possibly even further than that. In practice though, in the main part, these ancient cookbooks were just basic hieroglyphic instructions for meal preparation.
Interestingly, the most ancient recipe found, according to Professor Solomon Katz, are some tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Progressing into The time of the romans around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the early Romans made use of a good variety of herbs, including some that we all recognise for example bay, mint and asafoetida. During the next few hundred years, the upper-class families of the West strove to serve the most extravagent meals, and as a result cooks and their collection of recipes were highly sought after. Notwithstanding that, it was during the 1800s that haute cuisine and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, verifying, and writing down recipes of the day. By the time we get to the twentieth century, cookery publications were greatly in demand mostly as a result of increased literacy, people having more free time and being a little richer. Like it or not, the introduction of TV brings us TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes such as those found on the site you are now reading. |
