The History of Recipes
We are able to read the history of meal recipes far back into the distant past, in truth as far into history as the ancient Egyptians, and possibly even further. In practice though, in the main part, these ancient cookbooks were just simple hieroglyphic instructions for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to historians are a few tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. As we move into The time of the romans around 25BC a roman called Apicius created a few scripts which described recipes enjoyed by his fellow Romans. In his publication, Apicius tells us how the roman meals were separated into starters, main meal and dessert, a style of dining still practiced today. He also tells us how the ancient cooks used many herbs, including a few that are still present in modern kitchens such as basil, fennel and dill. Later, in the fifteenth century, people returning from the crusades brought us many new spices and herbs from Arab countries, such as parsley, basil and rosemary. The introduction of these new tastes was responsible for an eruption in publications on food, many of which are kept safe in private collections. During the next few centuries, the families of Europe tried to serve up the most exotic meals, and as a consequence, cooks and their collection of recipes were greatly in demand. Notwithstanding that, it was during the 19th century that fine cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, verifying, and recording recipes for their fellow cooks to enjoy. By the advent of the 20th century, cookbooks were increasing in popularity mostly due to more people being able to read, more free time and having more money. |
