The History of Recipes
Recipes as an idea can be found way back into ancient history, in fact as far back into recorded history as pharonic Egypt, and potentially, even further back. Interesting though that is, sadly, these ancient recipes were just basic hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the most ancient recipe discovered so far, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. Later on, in The time of the romans 25BC a man called Apicius compiled some scripts showing how to cook the recipes prepared by the Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvre, main course and desserts, something that is very familiar to us today. He also informs us how the Roman cooks were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern cooks such as bay, fennel and parsley. Over the succeeding few centuries, the rich families of Europe strove to lay on the most extravagent banquests, and because of this the best chefs and their collection of recipes increased in prestige. However, it wasn`t until the nineteenth century that cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, testing, and publishing popular recipes of the day. When we get to the 20th century, recipe books were starting to become popular as a result of higher levels of literacy, people having increased leisure time and a general increase in wealth. The arrival of TV brought us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this site. |
