The History of Recipes
It is possible to read the history of written recipes back into the far past, in truth as far back into recorded history as ancient Egypt, and possibly even further. Having said that, generally, these old cook books were just basic hieroglyphic instructions for preparing meals.
The truth of the matter is, the most ancient recipe in existence, according to experts in ancient history are some stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. As we move on, we have two interesting cookery books which were published in the fourteenth century : a book titled `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, they are unconnected to the indian food that is familiar to us all today, but rather descriptions of the types of meals served to the upper classes of the period. During the following few hundred years, the upper-class families of Wesstern Europe tried to lay on the most extravagent meals, and as a consequence, the best chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the 19th century that fine cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to assembling, trying out, and publishing recipes of the day. By the time we get to the 1900s, cooking books are increasing in popularity as a result of more people being able to read, people having increased spare time and a general increase in wealth. |
