The History of Recipes
Recipes as a concept can be observed far back into the far past, in truth as far into history as the early Egyptians, and maybe even further. Interesting though that is, in the main part, these ancient records were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe in existence, according to food historians is a series of clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius created some documents which described recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were divided into starters, entrees and desserts, a very modern way of dining. Additionally, he informs us how the ancient cooks made use of many herbs, including a few that will be familiar to modern cooks for example thyme, fennel and asafoetida. In the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab countries, including spices such as coriander, parsley, and rosemary. These new foods and tastes was responsible for an outbreak in books on cookery, most of which are now in private collections. When we get to the 1900s, cookbooks were starting to become popular due to more people being able to read, increased leisure time and having more money to spend. The arrival of TV gave us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing us all to search through massive numbers of recipes like the ones you can find on this web site. |
