The History of Recipes
We are able to trace the history of meal recipes way back into history, certainly as far back into recorded history as the ancient Egyptians, and potentially, even further back. Interesting though that is, sadly, these early cook books were just simple hieroglyphic or cunieform instructions for food preparation.
As we move into The time of the romans around 25BC a roman called Apicius compiled a few scripts describing recipes prepared by wealthy roman citizens. In his works, he describes how the meals were separated into appetizers, main meal and afters, a style of dining still practiced today. Aspicius also describes how the cooks of his times were skilled in the use of a good variety of spices, including a few that will be familiar to modern chefs like basil, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us many foods, spices and herbs from Arab countries, including coriander, basil and rosemary. These new foods and tastes led to an explosion in manuscripts on cooking, many of which are kept safe in private cookery archives. By the advent of the 20th century, cookery books were in great demand, due to more people being able to read, people having more leisure time and being a little richer. |
