The History of Recipes
Food historians have found proof that recipes existed far back into history, at least as far back as pharonic Egypt, and potentially, even further back. Interesting though that is, sadly, these early recipes were just very basic pictorial recipes for meal preparation.
Interestingly, the oldest recipe discovered so far, according to experts in ancient history are some ancient tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. As our culinary historical trip moves on a few more years we find two recipe books which were published in the fourteenth century ; a book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these two books are unconnected to the indian curry that appears on menues today, but rather accounts of the types of food prepared by the chefs of the nobility of the period. In the fifteenth century, people returning from the crusades brought back a variety of foods and spices from Arab cuisine, including spices like basil and coriander. The introduction of these new culinary ideas led to an eruption in books on cookery, some of which still exist in private libraries. During the succeeding few hundred years, the powerful and wealthy competed to serve up the most extravagent meals, and because of this the best chefs and their recipe collections increased in prestige. However, it was during the 19th century that cookery and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, verifying, and publishing recipes for their fellow cooks to enjoy. By the arrival of the 1900s, cook books were highly popular as a result of higher levels of literacy, people having increased leisure time and a general increase in wealth. Like it or not, the introduction of television gave us TV cooks and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes like those on the site you are now reading. |
