Ingredients
4 each pork chops 1/2 inch thick
1 flour
1 seasoning, salt -- pepper
1 etc
4 each potatoes sliced
1 each onion
2 cup cream of mushroom soup
1 cup water
1 sliced
Directions
Flour, season & brown pork chops in skillet, set aside. Peel and slice
enough potatoes to line roasting pan, filling to desired depth. Slice
an onion over the raw potatoes and salt to taste. Place browned pork
chops on top of potatoes. Pour two cans of cream of mushroom soup and
a can of water over the chops. Bake (maybe 350F) uncovered about 1
hour or until potatoes are done. Length of time depends on the amount
of food as explained below... You can use as few pork chops &
potatoes as you want, or as many as you can cram into the pan. I
generally buy a pork loin or whatever is on sale at my favorite
supermarket. I've even substituted pork steak for pork chops & that
works too. I found that adding a little more wateer makes more gravy
over potatoes.

The History of Recipes
It is quite possible to track the history of recipes way back into the far past, certainly as far back into history as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, these, ancient cookbooks were just simple hieroglyphic instructions for food preparation.
Interestingly, the oldest recipe in existence, according to Professor Solomon Katz, is a series of tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. During Roman times 25BC a roman called Apicius assembled a collection of scripts detailing recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvres, entrees and dessert, a very modern way of dining. This early Roman chef describes how the chefs of Roman times made use of a good variety of herbs and spices, including a few you will know such as bay, fennel and asafoetida. During the succeeding few centuries, the upper-class families of Wesstern Europe competed to serve up the most extravagent meals, and as a consequence, the best chefs and their collection of recipes were greatly in demand. Even so, it wasn`t until the 1800s that haute cuisine and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing popular recipes of the day. By the time we get to the twentieth century, cooking books are highly popular as a result of more people being able to read, people having increased free time and being a little richer. |
