The History of Recipes
Written recipes as a concept can be observed far back into ancient history, in truth as far back as the ancient Egyptians, and possibly even further than that. Interesting though that is, mostly, these old recipes were just very basic pictorial instructions for preparing meals.
In an interesting twist, the most ancient recipe in existence, according to academics is a series of clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. Much later, in Roman times a roman called Apicius created a collection of documents which described recipes cooked by the Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvre, entrees and afters, a style of dining still practiced today. Aspicius also recounts how the chefs of Roman times made use of a good variety of spices and herbs, including some familiar names for example bay, mint and dill. Later on, in the 15th century, people returning from the crusades brought us many new spices and herbs from Arab countries, such as rosemary and coriander. These new foods and tastes prompted an outbreak in manuscripts on cookery, many of which are now in private libraries. Over the succeeding few hundred years, the rich and powerful families of the West tried to offer the most exotic meals, and as a consequence, cooks and their recipe collections were at a premium. However, it wasn`t until the 1800s that cooking and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, testing, and writing down recipes of the day. The TV revolution gave us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes such as those found on this recipe site. |
