Ingredients
1 large onion, sliced
1 1/2 tsp salt
6 loin chops, 3/4 thick
1/2 tsp dry mustard
3 tbsp chopped parsley
1/2 stick oleo
1 cup dry white wine
3 tbsp salad oil
1/8 tsp pepper
Directions
Saute onion in hot oil in large skillet, drain on paper towels and
set aside. Reserve drippings. Combine butter, mustard, salt and
pepper. Stir to make paste, spread on both sides of chops. Brown
chops on both sides in reserved drippings, drain. Return onions to
skillet, add wine, cover and simmer 1 hr. or until chops are done.
Sprinkle with chopped parsley before serving. Courtesy Telephone

The History of Recipes
We are able to read the history of meal recipes far back into antiquity, in truth as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, sadly, these ancient recipes were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
As we move into The time of the romans 25BC a man called Apicius compiled a few scripts describing recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvre, main course and desserts, a very modern way of dining. He also describes how the Romans used many different spices, including a few you will know like bay, rue and asafoetida. During the next few hundred years, the wealthy families of Wesstern Europe competed with each other to serve up the most extravagent banquests, and consequentially the best chefs and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down recipes to help cooks of their time. Like it or not, the introduction of TV brought us cooking programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like those on this web site. |
