Ingredients
1 tbsp granulated sugar
2 tbsp fish sauce(nuoc mam)
1 onion
4 cloves garlic
1 tbsp vegetable oil
4 boneless pork chops
Directions
Combine salt, sugar, fish sauce, minced onion, chopped garlic and
oil. Pour over chops in a shallow dish.
Let marinate 3 to 4 hours, turning meat occaisionally. Grill or bake
in a 350 degree oven for 45 minutes to 60 minutes or until cooked.
Slice into bite sizes pieces before serving. Make 4 servings

The History of Recipes
It is quite feasible to trace the history of recipes way back into ancient history, in fact as far into history as early Egypt, and potentially, even further back. Interesting though that maybe, these, early records were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In fact, the oldest recipe discovered, according to food historians are some tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into Roman times around 25BC a roman called Apicius compiled a number of documents detailing recipes cooked by wealthy roman citizens. In his scrolls, Apicius tells us how the roman meals were split into starters, main course and desserts, a style of dining still practiced today. This early Roman chef recounts how the Roman chefs used many aromatic flavours, including some familiar names such as thyme, rue and dill. Later on in the 1400s, people returning from the crusades brought us many foods and herbs from the holy land, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices was responsible for a torrent in books on cookery, many of which are kept safe in private collections. For the next few years, the rich and powerful families of Wesstern Europe competed to offer the most extravagent meals, and consequentially the best cooks and their collection of recipes could command a high salary. Even so, it was during the nineteenth century that cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes for their fellow cooks to enjoy. The introduction of the TV brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing us all to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
