Ingredients

1 tbsp granulated sugar
2 tbsp fish sauce(nuoc mam)
1 onion
4 cloves garlic
1 tbsp vegetable oil
4 boneless pork chops


Directions

Combine salt, sugar, fish sauce, minced onion, chopped garlic and
oil. Pour over chops in a shallow dish.
Let marinate 3 to 4 hours, turning meat occaisionally. Grill or bake
in a 350 degree oven for 45 minutes to 60 minutes or until cooked.
Slice into bite sizes pieces before serving. Make 4 servings

The introduction of these new herbs and spices was responsible for a torrent in books on cookery, many of which are kept safe in private collections.

For the next few years, the rich and powerful families of Wesstern Europe competed to offer the most extravagent meals, and consequentially the best cooks and their collection of recipes could command a high salary. Even so, it was during the nineteenth century that cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes for their fellow cooks to enjoy.

The introduction of the TV brings us TV cookery programs and the demand for the accompanying recipe books.
