Ingredients
1 tbsp granulated sugar
4 cloves garlic
2 tbsp fish sauce (nuoc mam)
1 tbsp vegetable oil
1 onion
4 boneless pork chops
Directions
Combine salt, sugar, fish sauce, minced onion, chopped garlic and
oil. Pour over chops in a shallow dish. Let marinate 3 to 4 hours,
turning meat occaisionally. Grill or bake in a 350øF oven for 45
minutes to 60 minutes or until cooked. Slice into bite sizes pieces
before serving. Make 4 servings.

The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into history, certainly as far into history as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that is, mostly, these ancient cook books were just simple pictorial instructions for preparing food.
In fact, the most ancient recipe found, according to experts in ancient history are some clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Later on, in Roman times around 25BC a man called Apicius assembled a number of scripts which described recipes cooked by the Romans. In his works, Apicius tells us how the meals were separated into starters, entrees and afters, something we still use today. He also informs us how the Romans used many different aromatic flavours, including many that are still in use today such as thyme, fennel and dill. For the next few years, the powerful families of Wesstern Europe tried to offer the best banquets, and as a result the best chefs and their collection of recipes increased in prestige. Nevertheless, it was during the 1800s that cooking and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. By the advent of the twentieth century, recipe publications were starting to become popular due to increased literacy, people having increased leisure time and a general increase in wealth. The introduction of the TV brought us celebrity TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes like those on sites such as the one you are reading now. |
