Ingredients
1 tbsp granulated sugar
4 cloves garlic
2 tbsp fish sauce (nuoc mam)
1 tbsp vegetable oil
1 onion
4 boneless pork chops
Directions
Combine salt, sugar, fish sauce, minced onion, chopped garlic and
oil. Pour over chops in a shallow dish. Let marinate 3 to 4 hours,
turning meat occaisionally. Grill or bake in a 350øF oven for 45
minutes to 60 minutes or until cooked. Slice into bite sizes pieces
before serving. Make 4 servings.

The History of Recipes
It is actually possible to trace the history of recipes back into antiquity, at least as far as the ancient Egyptians, and possibly even further than that. Interesting though that is, sadly, these early recipes were just simple hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to experts are some clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. As we move into Roman times 25BC a man called Apicius assembled some documents describing recipes enjoyed by wealthy roman citizens. In his works, he recounts how the meals were split into hors d`oeuvres, main course and desserts, something we still use today. Additionally, he tells us how the ancient cooks were skilled in the use of a good variety of herbs and spices, including some familiar names for example thyme, mint and dill. Later, in the fifteenth century, the Crusaders brought back many spices and herbs from Arab cuisine, such as basil and coriander. The introduction of these new culinary ideas created an increase in books on cookery, many of which are kept safe in private cookery archives. During the next few centuries, the powerful families of Europe competed with each other to serve up the most exotic banquets, and because of this cooks and their recipe collections were highly sought after. However, it wasn`t until the nineteenth century that fine cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collecting, verifying, and writing down recipes of the day. By the advent of the 20th century, recipe publications were in high demand, mostly due to higher levels of literacy, people having more free time and disposable income. The revolution that is television brought us cooking programs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access massive numbers of recipes such as those found on our web site. |
