The History of Recipes
It is actually possible to trace the history of recipes far back into the distant past, in fact as far as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, sadly, these ancient cookbooks were just simple hieroglyphic recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to experts in ancient history is a series of stone tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. During the time of the Roman Empire a man called Apicius compiled some scripts detailing recipes cooked by wealthy Romans. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvres, main meal and desserts, something we still use today. Additionally, he informs us how the early Romans made use of a wide range of spices, including many that are still in use today like thyme, mint and parsley. As our culinary historical trip moves on a few more years we have two recipe books dating from the 1300s - a book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Don`t be fooled by the titles though, these books have no connection with the indian curry that is familiar to us all today, but instead recipes for the types of food cooked for the wealthy. In the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, including spices such as coriander, parsley, and rosemary. These new culinary innovations caused an explosion in recipe books, most of which are kept safe in private collections. By the arrival of the 20th century, recipe books were in great demand, due to increased literacy, leisure time and a general increase in wealth. |
