The History of Recipes
Academics have tracked the existance of recipes far back into the distant past, at least as far back into history as early Egypt, and maybe even further. Interesting though that is, generally, these old cookbooks were just simple hieroglyphic or cunieform recipes for food preparation.
As we move into Roman times around 25BC a roman called Apicius wrote a collection of documents detailing recipes cooked by his fellow Romans. He describes how the meals were divided into hors d`oeuvre, main course and dessert, a very modern way of dining. Additionally, he recounts how the Romans were skilled in the use of a good variety of spices, including some that we all recognise for example bay, rue and asafoetida. During the following few centuries, the powerful and wealthy competed to offer the most exotic meals, and as a consequence, the best cooks and their recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, testing, and writing down the recipes of their peers. The revolution that is television gave us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, permitting everybody to access thousands of recipes such as those found on this web site. |
