The History of Recipes
It is quite feasible to prove the history of written cooking instructions back into the distant past, in fact as far back into history as the Egyptians, and potentially, even further back. In practice though, generally, these early records were just primitive pictorial recipes for food preparation.
Fascinatingly, the oldest recipe found, according to experts in ancient history is a collection of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. Progressing into The time of the roman empire around 25BC a roman called Apicius assembled a number of documents detailing recipes prepared by wealthy roman citizens. In his scrolls, he describes how the roman meals were split into starters, main meal and desserts, a style of dining still practiced today. He also recounts how the Romans used many different herbs and spices, including some that we all recognise for example bay, rue and asafoetida. Over the following few centuries, the upper-class families of the West competed to lay on the best banquets, and as a result the best cooks and their recipes increased in prestige. Even so, it was during the 19th century that cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collating, verifying, and writing down the recipes of their peers. When we get to the 1900s, cookery publications were highly popular due to increased literacy, people having more spare time and a general increase in wealth. The arrival of TV brings us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes like those on our web site. |
