Ingredients
1 linguica sausage, about 6 ounces, c, ut on 1/4-inch d
3/4 cup raw long-grain white rice
1 1/2 cup water
1 pinch salt
2 tbsp chopped fresh cilantro.
Directions
Saute diced sausage in a heavy saucepan until browned, about 5
minutes. Drain off excess fat. Add rice, stirring well to coat
grains. Add water and salt, and bring a boil. Lower heat, cover pan,
and simmer for 19 minutes, or until grains are soft and water has
evaporated. Stir in cilantro.
Serves 4.
PER SERVING: 215 calories, 6 g protein, 28 g carbohydrate, 8 g fat
(3 g saturated), 2 mg cholesterol, 316 mg sodium, 0 g fiber.

The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions far back into ancient history, certainly as far as ancient Egypt, and maybe further still. Having said that, these, ancient records were just very basic hieroglyphic instructions for food preparation.
Progressing into The time of the romans around 25BC a man called Apicius created a collection of scripts detailing recipes prepared by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and dessert, a very modern way of dining. This early Roman chef describes how the ancient Romans used many aromatic flavours, including a few you will know such as bay, mint and dill. Later, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from Arab countries, including spices like parsley, basil and rosemary. These new culinary innovations caused a surge in recipe publications, most of which still exist in private collections. Like it or not, the introduction of TV brought us TV cooks and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
