Potato & Red Onion Roast Recipe


Ingredients

4 lb red potatoes, small, halved but unskinned
2 large red onions, cut into 1/2-in. bits
2 tbsp olive oil
1 tbsp parsley, dried, crushed
1 tbsp rosemary, dried, crushed
1 salt and pepper to taste


Directions

Preheat oven to 400 degrees. Coat uncooked potato halves and onion
bits in oil and seasonings. Spread in a deep-sided roasting pan and
roast for about 40 minutes. Turn the onion/potato mixture several
times while roasting until all pieces are light brown.

Serve with a green bean salad and whole wheat bread sticks.

The History of Recipes

He also describes how the Roman chefs were skilled in the use of a wide range of herbs, including many that are still in use today such as basil, fennel and parsley.

During the next few centuries, the powerful and wealthy competed to offer the most extravagent meals, and because of this the best chefs and their recipe collections were at a premium. Notwithstanding that, it wasn`t until the 1800s the formal cooking and recipe publications really came of age. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, testing, and writing down recipes that were common in the better off homes of the day.

The introduction of television brings us TV cookery programs and the spin-off recipe books.

Which brings us neatly to the present day and the invention of the internet, allowing everyone to search through thousands of recipes like those on this recipe site.
