Potato & Tomato Soup Recipe


Ingredients

1 tbsp olive oil
1 medium onion,chopped
3 cloves garlic, chopped
4 cup chicken stock or canned chicken bro, th
4 medium potatoes, peeled and sliced thin
1 lb italian tomatoes, fresh or canned,, roughly
1 chopped, with their liquid
1/2 cup fresh basil leaves, coarsely choppe, d


Directions

Heat the olive oin in Dutch oven; add the garlic and onions and sauce
gently until soft. Add the chicken stock and potatoes. Bring to a
boil, then simmer gently for 15 to 20 minutes or until the potatoes
are tender. Add the tomatoes and basil. Cook for about 5 minutes.

Serves 6.

Over the next few hundred years, the rich families of Europe tried to serve the most exotic banquets, and consequentially the best chefs and their collection of recipes increased in prestige. Nevertheless, it was during the 1800s that cookery and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, verifying, and publishing recipes for their fellow cooks to enjoy.

The arrival of TV brought us celebrity chefs and the accompanying recipe books.

And that neatly brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes like the ones you can find on the site you are now reading.
