The History of Recipes
Written cooking instructions as a concept can be observed way back into history, certainly as far back into history as the early Egyptians, and maybe further still. Interesting though that maybe, these, early recipes were just simple hieroglyphic instructions for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. As our culinary historical trip moves to more modern times there were a couple of interesting cookery books dating from the 14th Century : one book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are a little misleading though, these books are unconnected to the indian food that is served today, but instead descriptions of the types of meals eaten by the upper classes of the period. In the 15th century, people returning from the crusades brought us many new foods, spices and herbs from Arab countries, such as parsley, basil and rosemary. The introduction of these new tastes created an eruption in recipe manuscripts, the majority of which are kept safe in academic collections. Over the next few centuries, the upper classes tried to serve the best banquets, and as a consequence, cooks and their collection of recipes were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that fine cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collating, testing, and recording recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cookery books are increasing in popularity due to more people being able to read, more free time and being a little richer. The introduction of television gave us celebrity chefs and the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on this web site. |
