The History of Recipes
Food historians have proved the existence of recipes way back into the distant past, certainly as far back into history as the ancient Egyptians, and maybe further still. Having said that, these, old cook books were just very simple hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe found, according to Professor Solomon Katz, is a collection of tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Later on, there are two recipe books which appeared in the fourteenth century - one book entitled `Forme of Cury`, and another called `Curye on Inglish`. Perhaps surprisingly, these are nothing to do with the spicy food that is popular today, but instead accounts of the types of meals enjoyed by the rich people of the period. For the next few years, the powerful families of the West competed to serve up the most extravagent meals, and as a result the best chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the 1800s that cooking and recipe collections became popular. Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collating, trying out, and publishing recipes to help cooks of their time. By the advent of the twentieth century, recipe books are highly popular mostly as a result of increased literacy, people having increased spare time and being a little richer. |
