The History of Recipes
It is possible to read the history of written recipes back into the distant past, in truth as far back as pharonic Egypt, and maybe even further. Interesting though that is, these, ancient records were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
Later on, in The time of the roman empire 25BC a man called Apicius assembled a number of documents which described recipes cooked by his fellow Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into appetizers, main course and afters, something we still use today. Additionally, he describes how the ancient Romans were skilled in the use of a wide range of spices, including a few that are still present in modern kitchens for example bay, fennel and dill. Later, in the fifteenth century, the Crusaders brought back many new foods and spices from the East, including spices such as coriander, parsley, basil and rosemary. The introduction of these new culinary ideas created an increase in manuscripts on cookery, many of which are kept safe in private cookery archives. The arrival of television brought us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access massive numbers of recipes just like those on this web site. |
