The History of Recipes
Written cooking instructions as a concept can be tracked far back into distant history, in fact as far back into history as early Egypt, and possibly even further. Having said that, these, old recipes were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a series of clay tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. Moving our culinary historical trip onwards, we find some books which appeared in the 1300s ; one book called `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these books are unconnected to the indian food that is served today, but instead accounts of the types of food prepared by the chefs of the nobility of that period. Over the succeeding few centuries, the powerful and wealthy strove to serve up the most exotic meals, and as a result cooks and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collating, testing, and recording recipes for their fellow cooks to enjoy. When we get to the 20th century, cookbooks are greatly in demand mostly as a result of increased literacy, more free time and being a little richer. |
