2 TB olive oil
2 russet potatoes -- grated
1 carrot peeled and grated
1 TB chopped parsley
: Salt and pepper
Heat oil in small non-stick skillet over medium high heat. In a large
bowl stir together the potatoes, carrot, parsley and salt & pepper.
Add vegetable mixture to hot skillet and flatten with a spatula. When
pancake has browned flip over and continue to brown. Reduce heat and
cook pancake until crisp on outside and tender on the inside about 5
minutes per side.

We are able to read the history of meal recipes way back into the distant past, certainly as far back into recorded history as ancient Egypt, and possibly even further. As we move into The time of the romans around 25BC a man called Apicius assembled a collection of scripts detailing recipes enjoyed by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Additionally, he informs us how the ancient cooks used a wide range of spices, including a few that are still present in modern kitchens for example bay, mint and dill. Over the succeeding few hundred years, the powerful and rich houses competed with each other to offer the most exotic meals, and as a result chefs and their collection of recipes were highly sought after. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, testing, and writing down recipes to help cooks of their time. The TV revolution gave us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes like the ones you can find on this recipe site. |
