The History of Recipes
We can follow the history of meal recipes back into the far past, at least as far back into recorded history as the Egyptians, and maybe even further. Having said that, in the main part, these ancient recipes were just simple hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe in existence, according to experts in ancient history is a series of stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. During the time of the Roman Empire a roman called Apicius wrote a number of scripts describing recipes cooked by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into appetizers, entrees and dessert, a style of dining still practiced today. Aspicius informs us how the chefs of Roman times were skilled in the use of many spices, including some that we all recognise such as bay, rue and asafoetida. Over the following few hundred years, the powerful and rich houses competed with each other to serve the most extravagent banquests, and as a consequence, cooks and their recipes increased in prestige. However, it was during the 1800s that formal cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, testing, and writing down popular recipes of the day. By the arrival of the 20th century, cook books are in high demand, as a result of more people being able to read, people having more free time and a general increase in wealth. The introduction of television gave us cooking programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes like the ones you can find on this web site. |
