Ingredients
2 lb potatoes, grated into bowl
1 of cold water
1 medium onion, very finely chopped
2 eggs
3 tbsp flour
1 1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp pepper
1 vegetable oil, for frying
Directions
Soak potatoes in the water 10 minutes; drain and squeeze dry in a
kitchen towel. In large bowl combine all ingredients except oil; mix
thoroughly. Pour oil into large skillet to a depth of 1/8 inch; place
over medium heat. For each pancake, portion 1/2 cup Makes 4 to 6
servings (12 pancakes);

The History of Recipes
Experts have found proof that recipes existed back into the far past, in truth as far into history as early Egypt, and quite possibly further than that. Interesting though that is, generally, these old records were just primitive hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe found, according to food historians are a few tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Closer to modern times, we have two interesting recipe books which were published in the fourteenth century - a book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Perhaps surprisingly, they are unconnected to the indian curry that we all know today, but rather accounts of the types of food enjoyed by the rich and wealthy people of the period. During the following few hundred years, the rich and powerful families of Europe tried to serve up the most extravagent meals, and consequentially the best cooks and their recipe collections were greatly in demand. Nevertheless, it was during the nineteenth century that fine cooking and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, verifying, and publishing the recipes that were being prepared for the better households. The arrival of television brings us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes like the ones you can find on our site. |
