Ingredients
1 1/2 lb potatoes
1 salt & pepper
1 orange (grated zest only)
6 juniper berries (or more)
1 butter or oil
Directions
Peel and grate the potatoes. Season with salt, pepper, the finely
grated orange zest and the pulverized juniper berries. Divide into
six flattened heaps and fry in batches in a mixture of butter and oil
until golden-brown and crisp on both sides. Drain on crumpled kitchen
paper and keep the pancakes hot (uncovered) in a low oven while you

The History of Recipes
Written cooking instructions as an idea can be observed back into ancient history, in fact as far into history as the ancient Egyptians, and possibly even further than that. However, sadly, these ancient cook books were just simple hieroglyphic or cunieform recipes for meal preparation.
In fact, the oldest recipe discovered, according to food historians are a few tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a collection of documents detailing recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals were separated into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the ancient Romans were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern chefs such as thyme, fennel and parsley. Later, we have two recipe books published in the 14th Century - a cookery book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, these have no connection with the indian curry that is served today, but rather descriptions of the types of food served to the rich people of that time. Later on in the 1400s, knights returning from the crusades brought back many foods and spices from the holy land, including coriander, basil and rosemary. The introduction of these new foods and spices caused an outbreak in recipe books, the majority of which are now in academic collections. For the centuries that followed, the upper-class families of Europe competed to serve up the most extravagent banquests, and consequentially the best cooks and their recipes were at a premium. Nevertheless, it wasn`t until the 1800s that cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collecting, verifying, and publishing the recipes that were being prepared for the better households. By the time we get to the 20th century, cooking books are in great demand, as a result of better eduction, people having more leisure time and having more money to spend. The introduction of the TV brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes such as those found on our site. |
